Recipe of the day: Open party pies

When it comes to hosting a gathering, having the perfect snack is essential. Open Party Pies are a great choice for any occasion, whether it’s a birthday party, holiday celebration, or just a casual get-together. These delicious and easy-to-make pies are sure to impress your guests and leave them coming back for more.

To make Open Party Pies, you can get creative with the ingredients and seasonings. Add cheese or herbs for an extra burst of flavor, and serve them warm with dipping sauces like sweet chili or tangy barbecue. Your guests will love the combination of flavors and textures in these delightful pies.

Here’s a recipe for Portabellini mushroom and asparagus open pies that will surely be a hit at your next gathering:

Ingredients:
– 250 ml full-cream milk
– 30 g butter
– 20 g flour
– 1 large pinch of salt
– 1 tsp mustard powder
– Ground nutmeg
– 2 250g puff pastry sheets
– 100 g pancetta, sliced in half
– 150 g asparagus spears
– 250 g baby Portabellini or baby button mushrooms, sliced in half
– 40 g Parmesan cheese, grated
– 1 large egg, beaten for egg wash
– Olive oil
– Salt and pepper to taste

Instructions:
1. Prepare the béchamel sauce by warming the milk and melting the butter in a saucepan. Add flour and whisk until the mixture thickens. Season with salt, mustard powder, and nutmeg, then refrigerate.
2. Preheat the oven to 200˚C and line a baking tray with parchment paper.
3. Sauté the mushrooms in olive oil until golden brown, then season lightly.
4. Cut the puff pastry sheets into quarters and place them on the lined tray.
5. Spread béchamel sauce on each pastry square and top with pancetta, asparagus, mushrooms, and Parmesan cheese.
6. Fold up the corners of the pastry and seal them with water.
7. Brush the pies with egg wash and bake for 25 minutes until golden brown.
8. Serve with microgreens for a delicious and impressive snack.
