Recipe of the day: Bacon relish

Bacon relish is a versatile condiment that adds a perfect combination of smoky, sweet, and spicy flavors to any meal. Whether you spread it on warm bread, use it as a glaze for sausages, or enjoy it with a cheese platter, this relish is sure to elevate your dish. The best part is that you can prepare it today and let it rest overnight to allow the flavors to develop even further.

To make this delicious bacon relish, you will need the following ingredients:
– 500g thick, smoked bacon rashers, diced into 5mm pieces
– 4 medium red onions (about 500g), thinly sliced
– 1 white onion, thinly sliced
– 1 clove garlic, finely chopped
– 1 red chili, chopped
– 5ml yellow mustard seeds
– 80ml sweet sherry (such as Old Brown), optional
– 125ml apple cider vinegar
– 125ml light brown sugar
– 3 bay leaves
– 3ml cayenne pepper

Here’s how to prepare the bacon relish:
1. Fry the diced bacon over medium heat until crispy and golden brown. Drain on paper towels and reserve the fat in the pan.
2. Fry the onions, garlic, chili, and mustard seeds in the bacon fat for about 10 minutes until the onions start to color.
3. Stir in the sherry to deglaze the pan and reduce the liquid by half. Add the remaining ingredients and stir until the sugar has dissolved.
4. Add the cooked bacon back into the pan and cook until the mixture thickens and becomes syrupy.
5. Spoon the relish into a sterilized jar, seal it, and let it cool. Refrigerate overnight to enhance the flavors.
