In her book Steeped: The Chemistry of Tea, Francl delves into the intricate world of tea chemistry, revealing how factors like steeping time, water temperature, and even the type of water used can all impact the final flavour, aroma, and health benefits of your cuppa.

With hundreds of compounds at play, the chemistry of tea is a complex symphony of taste and aroma. Francl explains that the longer you steep tea, the more compounds are extracted, leading to a richer and more complex flavor profile. Balancing this extraction process is crucial, especially for black and green teas, where timing is key to achieving the perfect harmony of taste and mouthfeel.

Water temperature also plays a crucial role in tea brewing. Lower temperatures are ideal for preserving delicate compounds, while boiling water can extract more antioxidants, particularly in herbal teas. Francl’s research extends beyond traditional teas like black, green, white, and oolong, to include South Africa’s own Rooibos. She highlights the differences between red and green Rooibos, noting that the latter boasts higher antioxidant levels due to its unfermented state.

For those aiming to brew the perfect cup of tea, Francl offers some key tips:

  • Use boiling water (100°C): Ideal for black and Rooibos teas to unlock their full flavor and antioxidant potential.
  • Steep for 10 minutes: A longer steeping time extracts more compounds for a richer taste experience.
  • Choose fresh leaves: Opt for loose-leaf tea for superior quality and flavor over commercial teabags.
  • Use filtered water: Tap water minerals can alter the tea’s chemistry and taste, so filtered water is preferred.
