Paper wrapped sponge cake recipe

If you’re looking for a delicious and easy-to-make treat, look no further than paper-wrapped sponge cakes. These fluffy and golden cakes have a melt-in-your-mouth texture that will satisfy your sweet cravings. Whether you’re looking for a quick snack or a light dessert, these cakes are sure to hit the spot.

To make these paper-wrapped sponge cakes, you will need the following ingredients:
– 60 g (2 oz) cake flour
– 15 g (½ oz) cornstarch
– 5 egg whites
– 90 g (3 oz) fine sugar
– 5 egg yolks, lightly beaten
– 60 g (2 oz) unsalted butter, melted

To prepare the cakes, start by lining muffin cups with parchment paper and preheating the oven to 200°C (392°F). In a mixing bowl, beat the egg whites until frothy, then gradually add the sugar in three batches until soft peaks form. Be careful not to overmix. Gently fold in the beaten egg yolks, then add the sifted flour and fold until fully incorporated. Mix a bit of the batter with melted butter and fold it back into the cake batter.

Fill the muffin cups with the batter, about 2/3 full, and bake in the oven at 175°C (350°F) for 20 minutes or until they turn a light golden brown. Let the cakes cool before serving.

For added flavor, you can customize these cakes by adding a teaspoon of vanilla extract, lemon, or orange zest to the batter. You can also use a 12-tin muffin pan lined with cupcake baking cups for easier serving.
